Black Bean-Corn Salsa dip

Ingredients

  • 2 cans black beans (1 can drained and rinsed, 2nd can I just pour off the juice
  • Frozen corn cooked and cooled, (I use the same amount of corn as I use beans)
  • 1 cup of Rotel or a tomato salsa of your choice
  • Mrs Wages salsa dry mix (2 Tbls or more to taste) I use the mild
  • 2 tsp Lime Juice
  • Tostitos to dip

Instructions

  • Make a day ahead
  • Cook frozen corn and let cool
  • Drain and rinse 1 can of Black beans, just drain the second can
  • Mix corn and beans
  • Add your Rotell or salsa
  • Mix your spice mix to taste
  • Add lime juice
  • Mix well and refrigerate overnight if your family can wait that long
  • Serve with Tostito chips or Lime Tostitos
