Ingredients
- Kroger brand vegetable soup mix
- Any leftover frozen veggies you have in your freezer (I love extra corn and I usually add extra potatoes for my hubby)
- Cabbage (I use about 1/2 cup of Kroger slaw mix)
- Meat of your choice…I love chicken, but I will add leftover beef
- Chicken broth
- Seasoning of your choice (examples: salt, pepper, Italian seasoning, bay leaf)
- 1 can of some type of Tomatoes (I use what I have on hand: tomato sauce, crushed tomatoes, diced tomatoes etc.
Instructions
- If using beef, I sauté the meat in the soup pot until slightly pink
- If my chicken is frozen then I will cook it in water, shred then use some of that broth)
- Add your vegetables to your soup pot, add the amount of broth to your liking.
- add your seasoning of choice
- simmer until meat and veggies are tender.
- Soup is always better the next day.
