A Home Cooked Seafood Meal

Salad:

  • Baby leaf lettuce
  • Diced apple
  • Sliced grapes
  • Mandarin oranges
  • Pecans
  • Drizzle poppyseed dressing or raspberry vinaigrette!
  • Also, add cranberries (which I forgot).

I call them loaded potato cups.

  • Boil small red or white potatoes until tender
  • Place in an oil sprayed muffin tin, smash the potato in center to form a well
  • Place 1tsp sour cream, shredded cheese and bacon bits.
  • Place in a hot oven until cheese is melted.

The shrimp cocktail was one of those small frozen round trays on sale plus I had a coupon!

Catch salmon fillets on sale….

  • Preheat oven to 450 degrees
  • Brush 1.5 lbs of fillets with olive oil
  • Sprinkle heavily with lemon pepper (or your choice of seasoning)
  • Place in a HOT cast iron skillet with skin side UP
  • Cook for 5 minutes, flip fillets and place skillet in a 450 degree oven for 6 minutes or until food thermometer reads 135
  • Take out of oven and pour lemon juice over fillets (fresh lemons or bottled juice)
  • Place 1 TBl butter in the hot skillet with lemon juice
  • Once melted, spoon over fillets.

OMG, everything was delicious and I’d say this was prepared and ready to serve in less than 30 minutes.

I’ll guesstimate it cost me around $20.

In a restaurant it would be triple $.
