Microwave Rocky Road Fudge

Ingredients:

  • 2 cups of semisweet chocolate chips
  • 14 oz can sweetened condensed milk
  • ½ tsp vanilla extract
  • 2 ½ cups miniature marshmallows
  • 1 cup chopped nuts (pecans or walnuts)
  • Cooking spray

Instructions:

  • Line an 8×8 or 9×9 pan with foil, leaving handles on the sides, and coat with cooking spray.
  • Microwave chocolate chips and condensed milk in a large bowl at 45-second intervals until melted. Stir in vanilla extract until smooth.
  • Fold in marshmallows and nuts.
  • Press the fudge into the prepared pan.
  • Refrigerate until it is firm.
  • Remove using foil handles and cut into pieces.
